I had fun playing with a new PLANT-BASED/VEGETARIAN Soup aka Bean-Like Chili! 

It was super easy to make, MASSIVELY filling and made for a good few days of meals!! 

Here's what I did (and hubby LOVES it - coming from a meat eater)! It's ENTIRELY plant based - so if you need to add some additional protein - do it up and have fun!

Easy Peasy Strawberry Spinach Salad

This is my GO-TO salad when we have friends over or heading to a BBQ and want to bring something light & fresh!

This unassuming little salad checks all the boxes; especially in the flavor department.  It's the sweetness of summer strawberries, tossed with nutrient rich greens, dose of healthy fat, a dash of a yummy accessory & added bonus of protein (*optional).

Turnip Fries, anyone?



Dude, this nutrition course is totally diversifying my meal palette! I mean, I made Turnip Fries!! And they were AH-MAZING! I was a bit skeptical at first, but they were delish. How can these not be a carb?! A total win with the kids too. #Winning.
